Join us in class for all things chicken! We will discuss how to choose a great whole chicken, how to use all of the parts, and how to break it down. Students will leave class with two broken down chickens, a bag with bones for stock, chicken fat and skin ready to be rendered for schmaltz, and Hill's Kitchen's favorite brine mix to play with!
